The Beer Chimay blue is a beer of type trappist to high fermentation, developed by brewer Abbey Our Lady of Scourmont in Forges in Belgium.
The strongest of the beers of the Chimay abbey has a black dress-mahogany that hints at its intensity.
Its foam beige, is fine and creamy. The aroma has tones of coriander, vanilla, caramel, and nuances of smoke. The first sip gives an astringency and peppery, due to the carbonation, and the taste of caramel appears with a great magnitude.
Some spicy tones appear especially in the first mouth, as well as some floral notes, because the hopping is essentially aromatic. His body is firm and full, her spread is long.
It matures in taste after 1 to 2 years in cellar, and may be stored for up to 8 years without losing its taste qualities.
